The house we live in is more than 200 years old. The extensive brick-vaulted cellar is of the same age. Although it was completely renovated in 2011, its story was preserved. The cellar combines tradition and progress. These days most of our wine is produced in stainless steel tanks, but we decided to keep an oak barrel. During the wine-making process, the contents of a tank can be cooled in a very short time, which stops fermentation without the use of chemicals.
